When autumn comes, the mushroom season also starts. There are many people who will visit the forests these weeks in search of niscalos, boletus, and all kinds of mushrooms, and with them prepare all kinds of recipes, although how to conserve autumn mushrooms throughout the year?

How to store autumn mushrooms all year round

The mushroom season is relatively short (usually only from October to December and at most January), so if we like to cook dishes with boletus and other varieties, we can try to keep all the mushrooms we collect during these weeks.

To do this, we can opt for several methods that will allow us to freeze mushrooms, conserve them dehydrated or also preserved.

Store mushrooms in the freezer

If you want to keep your niscalos or any other variety of seasonal mushrooms, you can choose to freeze. To do this, you need to cook the mushrooms first. Think that if, for example, you freeze raw niscales, which contain 94% water, you're only going to get the ice to increase its size by breaking its fibers and reducing its organoleptic properties.

Once you get home, you have to clean up the mushrooms, trying to get rid of all the land. Don't wash them with water, just remove the remains with the help of a knife and a rag or kitchen paper.

Fry them in olive oil on low heat and then keep them in vacuum bags. Or as mentioned above, you can lick them, boil them in hot water for two minutes, drain well and dry with a kitchen paper. Once this is done, you have to store the niscales in hermetic freezing bags.

Now you can put the mushrooms in the freezer for a maximum of six months. In case your freezer has a quick freeze tray, it'll be good to put the mushrooms there for 24 hours. Then you can pass them to a normal temperature tray.

Store dehydrated mushrooms

In the case of boletus, one of the best ways of conservation is dehydration (which will also serve you in fact for any other seasonal mushroom), you must start as we explained, cleaning well but without using water.

Once this is done, we cut them into sheets that you must place on a kitchen paper and cover them with a clean gauze cloth. We let them dry in a cool, dry place.

Once they are dried, store the boletus in glass jars and close hermetically. The moment you want to consume the mushrooms, you take them out of the boat and then immerse them in warm water for an hour, drain and cook.

Preserved mushrooms

There are several methods for conserving canned mushrooms; a system that will also allow the mushrooms to stand in good condition for between 6 and 12 months. Here are some of the most commonly used methods:
